Ingredients

  • 2 Tbsp. lemon juice
  • 1 lb. cod fillets
  • 16 oz. can sliced stewed tomatoes
  • 1/2 tsp. mixed Italian herbs
  • 1 cup minced celery
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup mushroom pieces

Instructions

  1. Spray a shallow nonstick baking dish with cooking spray and sprinkle with 1 tablespoon of lemon juice.
  2. Arrange the cod fillets in a single layer in the dish and drizzle with the remaining lemon juice.
  3. In a bowl, combine the stewed tomatoes, Italian herbs, minced celery, chopped onion, chopped green bell pepper, mushroom pieces, dried thyme, garlic, hot pepper flakes, salt, and pepper.
  4. Spoon the tomato mixture over the fish fillets.
  5. Bake uncovered in a preheated 350°F (175°C) oven for 25 to 30 minutes, until the fish flakes easily and the sauce is thick.
