Baked Haddock With Brie

Ingredients

  • 2 None carrots, peeled and cut into thin strips
  • 1 None medium onion, peeled and cut into thin strips
  • 4 sprigs fresh thyme, plus extra for garnish
  • 1/4 cup dry white wine
  • 4 None haddock fillets, lightly salted, rolled up and secured with toothpicks
  • 1/2 None 8 oz package of brie, rind removed and diced
  • 3/4 cup sour cream
  • 20 None medium shrimp, uncooked, thawed, and peeled

Instructions

  1. Preheat the oven to 400°F. In a saucepan, bring the carrots, onion, thyme, wine, 1/2 cup water and a pinch of salt and white pepper to a boil. Add the haddock, cover and simmer over a medium heat for 6 mins.
  2. Remove the fish from the pan with a slotted spoon, then pour the stock through a sieve into a clean saucepan, reserving the vegetables. Add the brie and heat until melted. Stir in the sour cream and shrimp, then heat through. Season with salt and white pepper.
  3. Spoon the vegetables into individual casserole dishes and top with the haddock rolls. Cover with the shrimp sauce. Bake for 10-15 mins, until bubbling. Garnish with thyme and serve with baguette.
