Ingredients

  • 2 containers beef liver
  • 4 stalks celery
  • 1 large onion
  • 4 Tbsp olive oil
  • 2 cans stewed tomatoes
  • 2 cans tomato sauce
  • 1/2 stick vegetable margarine

Instructions

  1. Brown the beef liver on both sides in 2 tablespoons of olive oil using a skillet.
  2. Saute chopped celery and onions until tender; set aside.
  3. Place the browned liver pieces in the bottom of a Dutch oven.
  4. Pour the sautéed celery and onions over the liver.
  5. Add stewed tomatoes and tomato sauce on top.
  6. Top with half a stick of vegetable margarine.
  7. Bake in the oven at 375°F (190°C) for 1 hour.
  8. Serve hot, preferably over white rice.
