Ingredients

  • baked potatoes, cut into 1/2-inch slices
  • vegetable oil
  • Velveeta cheese
  • chopped chives
  • green onion slices
  • cooked bacon

Instructions

  1. Brush both sides of potato slices with oil; place on cookie sheet.
  2. Bake at 400° for 10 minutes on each side or until lightly browned on both sides.
  3. Top potato slices with cheese spread slices and sprinkle with desired toppings such as chopped chives, green onion slices, and crumbled bacon.
