  • 1/2 (12 oz.) pkg. smoked link sausage

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Shake flour in a large cooking bag, then place the bag in a baking pan.
  3. Add rice, canned tomatoes, drained mushrooms, sliced celery, chopped onion, water, basil, salt, pepper, and garlic powder into the bag.
  4. Squeeze the bag gently to blend the ingredients.
  5. Cut smoked link sausage into thirds.

Tips & Substitutions

For a more robust flavor, consider adding a dash of cayenne pepper or Italian seasoning to the rice mixture. If you don't have smoked link sausage, any cooked sausage will work, or you can omit it entirely for a lighter dish. Make sure to use a heavy-duty cooking bag to prevent any leaks during baking.

Serving Suggestions

Serve this Pork Chop, Rice and Spice Dinner with a fresh green salad or steamed vegetables for a balanced meal. It also pairs wonderfully with crusty bread, like Jack Baird's Bread, to soak up the flavorful juices. A glass of white wine would complement the dish nicely.

Storage & Reheating

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the pork chop and rice mixture in a microwave-safe dish, cover, and heat on medium power for 2-3 minutes, stirring halfway through to ensure even heating.

Frequently Asked Questions

Can I use brown rice instead of white rice?

Yes, you can substitute brown rice for white rice, but be aware that it may require a longer cooking time and additional liquid. Brown rice typically needs about 1 1/2 cups of water for every cup of rice, so adjust the liquid accordingly.

What kind of pork chops should I use?

For a more tender result, use thicker cuts of pork chops, around 1-inch thick, which will help them stay moist during the baking process.

Can I add other vegetables to the dish?

Absolutely! Feel free to add bell peppers, carrots, or peas to the rice mixture for added color and nutrition. Just make sure to chop them into small, even pieces to ensure they cook through in the same time as the other ingredients.
