Baked Stuffed Potato

Ingredients

  • 3 large baking potatoes
  • 2 Tbsp. butter
  • 2 to 4 Tbsp. cream or milk
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg white, beaten

Instructions

  1. Wash and scrub potatoes.
  2. Bake at 450° for 60 minutes or until potatoes are fully baked.
  3. Cut in half lengthwise and scoop out inside and whip, adding butter, cream, salt and pepper.
  4. Beat egg white until rounded peaks are formed and fold into the potato mixture.
  5. Pile mixture lightly into potato shells, leaving surfaces uneven.
  6. Return to oven 8 to 10 minutes, or until potatoes are thoroughly heated and tops are lightly browned. Makes 6 servings.
