Baked Stuffed Potato

Instructions
- Wash and scrub potatoes.
- Bake at 450° for 60 minutes or until potatoes are fully baked.
- Cut in half lengthwise and scoop out inside and whip, adding butter, cream, salt and pepper.
- Beat egg white until rounded peaks are formed and fold into the potato mixture.
- Pile mixture lightly into potato shells, leaving surfaces uneven.
- Return to oven 8 to 10 minutes, or until potatoes are thoroughly heated and tops are lightly browned. Makes 6 servings.
