Ingredients

  • 1 cup Ricotta
  • 1/2 cup Mozzarella
  • 1/4 cup grated Parmesan
  • 1 package large flaky biscuits (refrigerated)
  • 20 thin slices pepperoni

Instructions

  1. Preheat oven to 350° F.
  2. Combine Ricotta, Mozzarella, and Parmesan cheese in a small bowl.
  3. Halve each biscuit horizontally to form 20 thin biscuits.
  4. Gently shape each piece of dough into an oval approximately 2 1/2 x 4 inches.
  5. Place a pepperoni slice on one end of the dough oval.
  6. Add a tablespoon of cheese mixture on top of the pepperoni.
  7. Moisten the edges of the dough; fold over to enclose the filling, pinching edges to seal.
  8. Place the filled pastries on a lightly greased cookie sheet.
  9. Bake until golden brown, about 10 to 12 minutes. Serve warm.
