Ingredients

  • 5 cups sifted regular flour
  • 3 teaspoons double-acting baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 1/2 cups milk
  • 1 cup sugar
  • 2 bananas, mashed
  • 2 eggs
  • 1 tablespoon melted shortening
  • 1 teaspoon vanilla

Instructions

  1. Sift together the flour, baking powder, baking soda, nutmeg, and salt; set aside.
  2. Combine milk, sugar, mashed bananas, eggs, melted shortening, and vanilla in a large bowl.
  3. Mix well until smooth.
  4. Add the dry ingredients to the banana mixture and mix thoroughly.
  5. Turn out the dough onto a well-floured board.
  6. Roll the dough to a thickness of 1/4 inch and cut with a floured doughnut cutter.
  7. Heat deep fat to 375°F and fry the doughnuts until evenly browned.
