Ingredients

  • 2 bags spinach
  • 2 c. water chestnuts, sliced
  • 1 can bean sprouts (optional)
  • 4 hard-cooked eggs
  • 8 to 10 bacon strips, fried and drained
  • mushrooms

Instructions

  1. Place greens in a bowl; add chestnuts and bean sprouts.
  2. Top with bacon that has been crumbled and eggs.
  3. Eggs should be halved or quartered.
