Basic Blender Crepes

Ingredients

  • 1 1/2 cups milk
  • 3 eggs
  • 1 3/4 cups all-purpose flour
  • 2 tablespoons butter or margarine, melted

Instructions

  1. Add all ingredients to blender jar.
  2. Cover and process at stir speed until blended, 20 to 25 seconds.
  3. Scrape down flour on sides of jar; blend 5 seconds more.
  4. Heat a 7-inch lightly-greased skillet over medium-high heat until water drops dance when sprinkled on it.
  5. Pour 2 tablespoons of batter into the skillet.
  6. Quickly tilt the skillet to cover the bottom with batter.
  7. Pour off any extra batter back into the blender jar.
  8. Cook until the first side is browned about 30 seconds, then turn to brown the second side.
  9. Stack crepes with wax paper between every 4 crepes.
  10. Place in a plastic bag until ready to fill.
  11. These crepes can be refrigerated or frozen.
