Ingredients

  • 4 eggs
  • 1 cup sugar
  • 2 (8 oz.) packages cream cheese
  • 2 tsp. vanilla
  • 1/4 tsp. salt

Instructions

  1. Place all ingredients in a blender.
  2. Blend on high for 1 minute or 3 minutes with an electric mixer.
  3. Pour into an 8-inch graham cracker crust, or it is great without a crust as well.
  4. Microwave on low for 19 to 23 minutes, rotating dish a quarter turn every 7 minutes until the center is almost set.
  5. Check if it is set by inserting a knife; if it comes out clean, it's ready.
