Ingredients

  • 2/3 cup sugar
  • 5 tablespoons flour
  • 1/4 teaspoon salt
  • 2 cups scalded milk
  • 3 beaten egg yolks
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla

Instructions

  1. Scald the milk and set aside.
  2. In a bowl, combine sugar, flour, and salt.
  3. Gradually add the scalded milk to the dry ingredients, stirring constantly.
  4. Add the beaten egg yolks to the mixture and cook over medium heat until thickened.
  5. Remove from heat and stir in butter and vanilla.
  6. Fold in 1/2 cup coconut into the filling.
  7. Pour the filling into a prepared pie crust.
  8. Sprinkle a little coconut on top of the meringue before baking.
