Basic Icebox Yeast Dough

A versatile, quick yeast dough that doubles in the fridge, perfect for soft dinner rolls, coffee cakes or cinnamon swirls, ideal for casual family meals or weekend baking.

Ingredients

  • 1 pkg. yeast
  • 1 Tbsp. salt
  • 2 eggs
  • 6 Tbsp. melted shortening
  • 2 c. warm water
  • 5 Tbsp. sugar
  • 7 c. flour (about)

Instructions

  1. Dissolve the yeast in the warm water.
  2. Add salt, sugar, and eggs; mix well.
  3. Add half the flour and all the melted shortening; mix well.
  4. Add the remaining flour and knead to a soft dough.
  5. Put the dough in the refrigerator.
  6. When the dough has doubled, work it down.
  7. Grease lightly if desired.
  8. Always keep the dough well covered.
  9. It keeps well for about 5 days.
  10. Use it for dinner rolls, coffee cake, or cinnamon rolls.
