Bean Chalupa

A hearty and flavorful Mexican-inspired bean and pork chalupa filling, perfect for tacos or over chips, with smoky chili and tender shredded pork for a satisfying meal.

Ingredients

  • 3 to 5 lb pork roast
  • 1 lb dry pinto beans
  • 1/2 cup onion chopped
  • 1 small can chopped chillies
  • 2 Tbsp chili powder
  • season to taste

Instructions

  1. Rinse the dry pinto beans.
  2. Place the beans in a large pot.
  3. Add the pork roast, chopped onion, chopped chillies, chili powder, and season to taste.
  4. Pour enough water to cover the pork roast and ingredients.
  5. Cover the pot and simmer for at least 5 hours or until the meat shreds easily.
  6. Stir the mixture to thicken it.
  7. Serve a spoonful of the mixture on taco shells or soft flour tortillas, with condiments such as lettuce, tomatoes, cheese, or sour cream.
  8. Alternatively, serve over corn chips.
