Beefaroni Pot Luck combines savory chopped meat, tender pasta, and flavorful peppers and onions for a hearty, crowd-pleasing dish perfect for family gatherings or potlucks.

Ingredients

  • 1 to 1 1/2 lb chopped meat
  • 1 to 2 green peppers, sliced in strips
  • 1 to 2 large onions, sliced
  • olive or salad oil
  • 1 lb ziti or spiral macaroni
  • salt and pepper

Instructions

  1. Using a 13 x 9 x 2-inch roasting pan, add enough oil to cover the bottom and heat on top of the stove.
  2. Add sliced green peppers and sliced onions to the pan.
  3. Cook on medium heat until vegetables are tender.
  4. Break up the chopped meat and add to the vegetables in the pan.
  5. Cook until the meat is browned.
  6. Meanwhile, cook the macaroni until slightly firm (al dente).
  7. Add sauce to the cooked meat mixture in the pan.
  8. Mix everything together and let cook for 5 to 10 minutes on low heat, turning occasionally.
  9. Drain the cooked macaroni and add it to the pan.
  10. Mix all ingredients thoroughly and cook through before serving.
