Ingredients

  • 1 cup brown sugar
  • 1 teaspoon garlic salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon cajun seasoning
  • 1 teaspoon black pepper
  • 1 (16 oz.) can beer
  • 1 whole chicken

Instructions

  1. Mix together the brown sugar, garlic salt, cayenne pepper, cajun seasoning, and black pepper to make the dry rub.
  2. Prepare the whole chicken by removing any giblets and patting it dry.
  3. Apply the dry rub evenly over the chicken's surface.
  4. Open the can of beer and pour out or drink half to leave some in the can.
  5. Place the chicken upright onto the beer can, inserting the can into the cavity of the chicken.
  6. Preheat the grill to medium-high heat.
  7. Place the chicken on the grill, balancing on the beer can, and cook for approximately 1.5 hours or until the internal temperature reaches 165°F (74°C).
  8. Remove the chicken from the grill and let rest for 10 minutes before carving.
