Ingredients

  • 1/3 cup dry white wine
  • 3/4 cup chicken stock or water
  • 1/2 teaspoon salt
  • 1 1/2 cups quick cooking rice
  • 1 1/2 to 2 chicken breasts, split
  • 1 (6 oz) can sliced mushrooms, undrained
  • 1 (10 1/2 oz) can cream of mushroom soup
  • 1/2 teaspoon thyme
  • 1 tablespoon fine bread crumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 400°F.
  2. In a 7 x 11 x 2-inch greased glass baking pan, combine white wine, chicken stock or water, salt, and rice.
  3. Place the chicken breasts over the rice mixture.
  4. Combine sliced mushrooms with cream of mushroom soup. Spread this mixture over the chicken.
  5. Sprinkle thyme, bread crumbs, and melted butter over the top.
  6. Cover tightly with foil and bake about 1 hour or until the chicken is cooked through.
