Ingredients

  • 16 oz. can pear halves
  • 16 oz. can sliced beets, drained
  • 1/2 cup thinly sliced red onion
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. white wine vinegar
  • 1/3 cup crumbled Blue cheese

Instructions

  1. Drain the pear halves, reserving 1 tablespoon of syrup.
  2. Cut the pears in half lengthwise.
  3. Place the pears, drained beets, and sliced red onion in a medium bowl.
  4. Whisk together the vegetable oil, white wine vinegar, and the reserved pear syrup.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Just before serving, sprinkle the crumbled blue cheese over the salad and toss lightly.
  7. Serve on a bed of lettuce leaves.
