Beet Preserves

Vibrant beet preserves infused with ginger, lemon, and almonds create a sweet, tangy spread perfect for adding color and flavor to breakfast or cheese platters.

Ingredients

  • 2 lb. beets
  • 3 c. sugar
  • 1 Tbsp. ground ginger
  • 3 small lemons
  • 1 c. finely chopped almonds

Instructions

  1. Cook whole beets until tender, in boiling water for about 30 minutes.
  2. Let cool; peel and dice.
  3. Combine diced beets, sugar, and ginger in a medium saucepan and cook over medium-low heat for 30 minutes.
  4. Add chopped lemon and continue cooking until slightly thickened, stirring occasionally to prevent sticking, about 30 minutes.
  5. Stir in almonds.
  6. Transfer to jars with tight-fitting lids and seal.
