Ingredients

  • 4 beets, peeled and diced
  • 4 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 1 stalk celery, chopped
  • 2 carrots, cut small
  • 6 cups water
  • salt and pepper
  • sour cream (2 tsp. for every serving)

Instructions

  1. Add all ingredients, except sour cream, to a pot.
  2. Simmer until the beets, potatoes, carrots, celery, and onion are tender.
  3. Serve hot, garnished with a teaspoon of sour cream per serving.
