Beet Tzatziki

- Preheat oven to 350°F. Wrap beet in foil and roast for 1 hour, or until tender. Let cool then peel and coarsely chop.
- Transfer chopped beet to a food processor along with yogurt, ricotta, garlic and lemon juice. Pulse until combined. Transfer to a serving bowl and fold in herbs.
