Ingredients

  • 1 1/2 to 2 lb. young beets
  • 1 1/4 cups liquid from beets
  • 1 lemon
  • 1 tablespoon orange peel, freshly grated
  • 2 1/2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cloves
  • 2 tablespoons frozen orange juice concentrate
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon butter

Instructions

  1. Cook the beets whole until tender.
  2. Drain the beets, reserving the liquid, then peel and slice thin.
  3. Pour the beet liquid into a pot.
  4. Add grated orange peel, lemon juice, sugar, salt, ground cloves, and orange juice concentrate to the liquid.
  5. Dissolve the cornstarch in a small amount of water to make a smooth paste.
  6. Add the cornstarch mixture to the liquid and beat with a whisk.
  7. Cook until the mixture becomes clear.
  8. Add the sliced beets and butter, then heat through.
  9. Serve hot.
