Berry Batter Cake

Ingredients

  • 2 c. blue or blackberries
  • 3/4 c. sugar
  • 3 Tbsp. butter
  • 1/2 c. milk
  • 1 c. sifted flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. salt
  • 1 c. sugar

Instructions

  1. Line a greased 8 x 8-inch pan with berries.
  2. Beat the next 6 ingredients with mixer for 1 minute.
  3. Pour over berries.
  4. Combine 1/4 teaspoon salt, sugar and cornstarch and blend well.
  5. Pour over batter evenly.
  6. Pour water or juice over all.
  7. Bake at 375° for 50 minutes.
  8. Serve by spooning cake upside down and covering with berries.
  9. Dollop with vanilla ice cream while still warm.
