Ingredients

  • 1 lb. dry navy beans
  • 1 cup potatoes, diced
  • 1 cup carrots, diced
  • 1 cup onions, finely chopped
  • 2 cups tomatoes, finely chopped or 1 (16 oz.) can
  • 1/2 cup salad oil
  • 2 cloves garlic, finely chopped
  • salt and pepper to taste

Instructions

  1. Soak the navy beans overnight in water.
  2. The next day, drain the soaked beans and cook them in their soaking water with enough additional water to cover for 1 hour over medium heat.
  3. Add diced potatoes, carrots, chopped onions, chopped or canned tomatoes, salad oil, and finely chopped garlic to the cooked beans.
  4. Cook the mixture for an additional hour or until all ingredients are tender.
  5. Season with salt and pepper to taste and serve.
