Ingredients

  • 2 cans tart pie cherries (not filling)
  • 1 cup sugar
  • 2 tablespoons tapioca
  • 3 to 4 drops almond extract
  • 10 drops red food coloring

Instructions

  1. Drain the cherries, reserving ¾ cup of juice.
  2. Combine the drained cherries, reserved juice, sugar, tapioca, almond extract, and red food coloring in a bowl.
  3. Pour the cherry mixture into a large 9 or 10-inch unbaked pie crust.
  4. Dot the filling with small pieces of butter.
  5. Apply the lattice topping over the pie.
  6. Bake at 400°F for 50 to 55 minutes until the crust is golden and the filling is bubbly.
