Bake-A-Roux

Instructions
- Mix flour and oil together in a heavy ovenproof container.
- Place the container on the center shelf in a preheated 400° oven.
- Bake for 1 1/2 to 2 hours, stirring every 15 minutes.
- Remove from oven and let cool.
- Transfer to containers with tight-fitting lids and store in the refrigerator until needed.
- The roux can also be frozen.
- Yields enough roux for 4 to 6 pots of gumbo.
