Ingredients

  • 8 c. all-purpose flour
  • 4 c. cooking oil

Instructions

  1. Mix flour and oil together in a heavy ovenproof container.
  2. Place the container on the center shelf in a preheated 400° oven.
  3. Bake for 1 1/2 to 2 hours, stirring every 15 minutes.
  4. Remove from oven and let cool.
  5. Transfer to containers with tight-fitting lids and store in the refrigerator until needed.
  6. The roux can also be frozen.
  7. Yields enough roux for 4 to 6 pots of gumbo.
