Ingredients

  • 16 oz. black-eyed peas
  • 6 cups water
  • 4 slices hickory smoked bacon
  • 1 Tbsp. salt
  • 1 Tbsp. sugar
  • 1 Tbsp. white wine vinegar
  • 1/4 tsp. black pepper
  • 1/4 tsp. garlic salt

Instructions

  1. Sort and wash the peas.
  2. Place the peas in a large Dutch oven.
  3. Cover with water 2 inches above the peas.
  4. Let soak for 8 hours and then drain.
  5. Add 6 cups of water and remaining ingredients to the Dutch oven.
  6. Bring to a boil, reduce heat, and simmer for 1 1/2 hours.
