Ingredients

  • 2 2/3 cups coconut
  • 2/3 cup sugar
  • 6 tablespoons flour
  • 1/4 teaspoon salt
  • 4 egg whites
  • 1 teaspoon almond extract

Instructions

  1. Heat oven to 325°F (163°C).
  2. Mix coconut, sugar, flour, and salt in a large bowl.
  3. Stir in egg whites and almond extract until well blended.
  4. Drop by teaspoonfuls onto lightly greased cookie sheets.
  5. Bake in the preheated oven for about 15 minutes or until lightly golden.
  6. Cool on wire racks before serving.
