Ingredients

  • 3 lb. zucchini squash
  • 1/4 lb. Velveeta cheese
  • 1 small bunch scallions

Instructions

  1. Wash the zucchini and cut into 1-inch slices.
  2. Put the zucchini slices in a large pot and cover with water.
  3. Bring to a boil and let boil for 5 minutes only.
  4. Drain the squash very well.
  5. Cut the scallions into very small pieces, including the green and white parts.
  6. Put the cooked squash into a long baking dish and sprinkle the scallions on top.
  7. Season with salt and pepper to taste.
  8. Slice the Velveeta cheese and place the slices on top of the squash and scallions.
  9. Bake in a 350°F oven until the cheese is melted, about 15 to 25 minutes.
