Ingredients

  • 1/2 cup shortening
  • 1 teaspoon lemon extract
  • 1 1/4 cups sugar
  • 2 eggs
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 jar (5 oz.) maraschino cherries, drained and chopped
  • 1/3 cup cherry juice
  • 1/2 cup nuts

Instructions

  1. Cream together shortening and lemon extract, then add sugar and beat until fluffy.
  2. Add egg yolks one at a time, beating well after each addition.
  3. Sift together flour, baking powder, and salt two times.
  4. Alternately add dry ingredients and milk mixture to the creamed mixture, beating only until smooth after each addition.
  5. Stir in nuts and chopped maraschino cherries.
  6. Fold in stiffly beaten egg whites gently.
  7. Pour the batter into a greased baking pan and bake at 375°F (190°C) for 25 minutes.
