Ingredients

  • 1/4 lb. red candied cherries
  • 1/4 lb. green candied cherries
  • 6 slices candied pineapple
  • 4 oz. can coconut
  • 2 c. pecans
  • 1/4 tsp. salt
  • 1/2 tsp. vanilla
  • 1 can Eagle Brand condensed milk

Instructions

  1. Mix the red candied cherries, green candied cherries, candied pineapple, coconut, chopped pecans, salt, and vanilla with the condensed milk until thoroughly combined.
  2. Drop the mixture by teaspoonfuls onto a greased or parchment-lined cookie sheet.
  3. Bake at 325°F (160°C) for 10 to 15 minutes until lightly browned.
  4. Let the fruit cake set in the refrigerator for a couple of hours before serving to improve texture and flavor.
