Ingredients

  • 1 lb. squash
  • 1/2 cup cracker crumbs
  • 1/4 cup green pepper
  • 1/2 stick oleo
  • 2 cups grated cheese
  • 1/2 cup celery
  • 1 medium onion
  • 1 beaten egg
  • pinch of sugar

Instructions

  1. Cook onion, celery, and green pepper in water until tender. Drain.
  2. Mix cooked vegetables with mashed squash, cracker crumbs, melted oleo, grated cheese, beaten egg, sugar, salt, and pepper.
  3. Pour the mixture into a baking dish and bake at 400°F until firm and slightly brown.
  4. Spread grated cheese evenly across the top of the casserole.
  5. Cover the casserole with a lid to melt the cheese before serving.
