Black Bean 'N Vegetable Chili Recipe
Ingredients
- 1 lg. onion ⓘ
- 1 tbsp. vegetable oil ⓘ
- 1 (28 ounce.) can whole tomatoes ⓘ
- 2/3 can picante sauce
- 1 1/2 teaspoon grnd cumin ⓘ
- 1 teaspoon salt
- 1/2 teaspoon basil leaves ⓘ
- 2 (16 ounce.) cans black beans ⓘ
- 1 green pepper, cut into 3/4" pcs ⓘ
- 1 red bell pepper, cut into 3/4" pcs ⓘ
- 1 zucchini, cut into 1/2" chunks (2 c.) ⓘ
Instructions
- In large saucepan, cook onion in oil till tender.
- Add in tomatoes, picante sauce and seasonings.
- Cover and simmer 5 min.
- Stir in beans, peppers and zucchini.
- Cover and simmer till vegetables are tender, about 15 min.
