Black Bean Skillet
Ingredients
- 1 (15 oz.) can black beans, drained and rinsed ⓘ
- 1 (14 oz.) can stewed tomatoes ⓘ
- 2 c. loose-packed frozen vegetables ⓘ
- 3/4 c. instant brown rice ⓘ
- 1 c. water ⓘ
- 1/2 tsp. dried thyme or dill weed, crushed ⓘ
- several dashes Tabasco sauce ⓘ
- 1/2 c. toasted slivered almonds ⓘ
- 1/2 c. shredded low-fat cheese (Mozzarella or Cheddar)
- 1 (10 oz.) can reduced sodium tomato soup (condensed) ⓘ
Instructions
- Stir together first 7 ingredients in large skillet.
- Bring to boil.
- Reduce heat, cover and simmer 12 to 14 minutes.
- Stir in can of tomato soup.
- Heat through.
- Stir in almonds.
- Top with shredded cheese.
- Serve with bread and salad.
- Serves 4.
