Black Bean Topper

Ingredients

  • 1 can black beans, drained and mashed
  • 1/2 c. finely chopped tomatoes
  • 1 Tbsp. cilantro
  • 1 tsp. grated lime peel
  • 1 tsp. lime juice
  • Ritz whole wheat crackers

Instructions

  1. Put mashed beans in a bowl; add tomatoes, cilantro, lime peel and lime juice. Mix well. Cover and refrigerate for several hours for flavors to blend. Spoon 1 teaspoon of mixture onto each cracker just before serving.
