Ingredients

  • 2 cans sweet dark cherries, drained
  • Cherry juice from the cans
  • 1 3/4 cups sugar
  • 1 teaspoon almond extract
  • 3 (3 oz.) boxes black cherry jello
  • 4 cups water
  • 1 (20 oz.) can pineapple tidbits, drained
  • 1/2 pound cream cheese, diced
  • 1/2 cup broken pecan pieces

Instructions

  1. Drain the two cans of cherries and place the cherries in a bowl.
  2. In a saucepan, combine the cherry juice and sugar, then bring to a boil.
  3. Remove from heat and stir in the almond extract.
  4. Pour the cherry juice mixture over the cherries and cover with plastic wrap.
  5. Refrigerate overnight until set.
  6. Dissolve the black cherry jello in 4 cups of boiling water according to package instructions.
  7. Let the jello cool slightly, then pour over the chilled cherry mixture in the dish.
  8. Refrigerate until the jello is firm.
  9. Stir in the drained pineapple tidbits and diced cream cheese into the jello.
  10. Sprinkle with broken pecan pieces on top.
  11. Serve chilled, optionally topped with sweetened whipped cream.
