Blackberry Shortbread

Ingredients

  • 1 c. butter (not margarine)
  • 1 c. sugar
  • 1 egg yolk
  • 2 1/2 c. flour
  • 1 c. pecans, chopped
  • 1 1/2 c. blackberry preserves

Instructions

  1. Cream butter and sugar. Beat in the egg yolk. Stir in flour and pecans. Press 3/4 dough in a 9 x 13-inch baking pan. Spread preserves on the top. Crumble the remaining dough on top (the dough shouldn't completely cover the preserves). Bake at 350° for 20 to 25 minutes. Makes about 24 (2 x 2 inch) squares.
