Blackened Scallops

Ingredients

  • 1 tsp. paprika
  • 1 tsp. black pepper
  • 1 tsp. white pepper
  • 1/2 tsp. cayenne pepper
  • 1 tsp. oregano
  • 1 tsp. rosemary
  • 1 Tbsp. olive oil
  • 1 green pepper, diced
  • 1 yellow pepper, diced
  • 1 dry shallot, peeled and chopped
  • 1 lb. scallops
  • 4 small portions cooked pasta
  • pinch of thyme and salt

Instructions

  1. Mix spices and herbs, except salt, with oil in a small bowl. Set aside.
  2. Heat cast-iron pan over high heat. When hot, add spice mixture to pan and cook 1 minute. Stir constantly!
  3. Add pepper and shallot. Mix and cook 2 minutes over high heat. Add scallops.
  4. Mix well.
  5. Cook 3 minutes over high heat. Stir once and season with salt.
  6. Serve over hot pasta.
  7. Sprinkle with lemon juice.
