Ingredients

  • 1 (1 lb.) container nonfat sour cream
  • 2 oz. (1/2 cup) Blue cheese, crumbled
  • 1/2 cup chopped scallions (about 4)
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper

Instructions

  1. Pulse sour cream and Blue cheese in a food processor with on-off motions until creamy and slightly lumpy.
  2. Remove the mixture to a bowl.
  3. Stir in chopped scallions, salt, and pepper.
  4. Refrigerate for at least 1 hour to allow the flavors to develop.
  5. Serve with raw or blanched vegetables.
