Ingredients

  • 1 c. butter, softened
  • 3/4 c. cornstarch
  • 1/2 tsp. salt
  • 1/2 c. powdered sugar
  • 1 1/2 c. flour
  • 2 Tbsp. lemon rind

Instructions

  1. Mix butter, cornstarch, salt, powdered sugar, flour, and lemon rind together until well combined.
  2. Chill the dough in the refrigerator for 1 hour.
  3. Form the chilled dough into 1-inch balls and place chopped nuts on top of each ball.
  4. Press gently with a glass to flatten slightly.
  5. Bake at 350°F (175°C) for 15 to 20 minutes until edges are lightly golden.
  6. Allow cookies to cool, then frost as desired.
