- Preheat the oven to 350°F. Grease and line a 12 x 8-inch baking pan with parchment paper, extending paper above long sides for handles.
- Beat the butter, 1/2 cup of the sugar and egg in a medium bowl with an electric mixer until combined. Stir in the sifted flours and custard powder. Spread into the prepared pan. Top with jam.
- For the coconut topping, combine the egg whites, coconut and remaining 1/4 cup sugar in a medium bowl. Sprinkle over the jam.
- Bake for about 40 mins topping is browned. Cool in pan on a wire rack. Cut into bars.
