Blueberry Meringues

Ingredients

  • 3 egg whites (room temperature)
  • 1/4 tsp. cream of tartar
  • 1/2 cup sugar
  • 1 cup fresh blueberries

Instructions

  1. In an electric mixer bowl, combine egg whites and cream of tartar.
  2. Beat at high speed until egg whites are foamy.
  3. Gradually add sugar and continue beating until egg whites are very stiff and glossy, but not dry.
  4. Fold in blueberries gently.
  5. Line baking sheets with brown paper.
  6. Drop meringue by spoonfuls onto paper about 2 inches apart.
  7. Bake at 275°F for 40 minutes or until firm but not browned.
