Ingredients

  • 3 qt. fish stock
  • 4 celery stalks
  • 1/2 cup drained capers
  • 1 tablespoon salt
  • 1 3/4 cups mayonnaise
  • 8 lb. fresh bluefish fillets
  • 1 large onion
  • bunch of fresh dill
  • 1/2 cup distilled white vinegar
  • 2 teaspoons pepper

Instructions

  1. Place the fish stock in a large pot; bring to a boil.
  2. Reduce heat and add the bluefish fillets.
  3. Simmer gently for about 8 minutes until cooked firm.
  4. Allow the fish to cool, then discard skin, dark center of meat, and bones.
  5. Cool the fish overnight.
  6. In a large bowl, combine cooled, prepared fish with chopped onion, chopped dill, drained capers, white vinegar, salt, and pepper.
  7. Add mayonnaise and mix thoroughly to combine.
  8. Serve chilled, garnished with additional herbs if desired.
