  • 1 Tbsp. margarine
  • 2 Tbsp. sugar
  • 2 1/2 tsp. salt
  • 2 c. scalded milk
  • 1 yeast cake
  • 1/4 c. lukewarm water
  • 6 to 7 c. sifted all-purpose flour

Instructions

  1. Place butter, margarine, sugar, and salt in a mixing bowl and add scalded milk; let cool until lukewarm.
  2. Dissolve yeast in lukewarm water and add to the mixture.
  3. Add enough sifted flour to make a soft, elastic dough.
  4. Turn the dough onto a floured board and knead thoroughly.
  5. Place in a greased bowl and let rise until double in bulk, about 1 hour, in a warm place.
  6. Punch the dough down with fingertips and let rise again for about another hour.
  7. Toss lightly on a floured board; knead and shape into a roll about 1/2-inch in diameter.
  8. Place the roll on a cookie sheet.
  9. Cut into small pieces with the edge of a teaspoon and let rise for 10 minutes.

Tips & Substitutions

For a richer flavor, consider using butter instead of margarine. Ensure your milk is scalded properly to activate the yeast effectively. If you prefer a sweeter dough, you can increase the sugar slightly. Kneading the dough thoroughly will enhance its elasticity. If you don't have a yeast cake, you can substitute with one packet (2 1/4 tsp) of active dry yeast.

Serving Suggestions

Bobalky can be enjoyed plain or with a variety of toppings. They pair beautifully with Sour Cream Topping for a tangy flavor. Consider serving them alongside a warm bowl of soup or as a side to a hearty stew. They also make a delightful addition to a brunch spread, complementing dishes like Jewish Cheesecake.

Storage & Reheating

Store leftover bobalky in an airtight container at room temperature for up to 2 days. For longer storage, refrigerate them for up to a week. To reheat, place them in a preheated oven at 350°F (175°C) for about 5-10 minutes until warmed through. This will help maintain their texture.

Frequently Asked Questions

Can I make bobalky ahead of time?

Yes, you can prepare the dough a day in advance and refrigerate it after the first rise. Allow it to come to room temperature before shaping and proceeding with the recipe. This can enhance the flavor and texture of your bobalky.

What can I do if my dough doesn't rise?

If your dough doesn't rise, it could be due to inactive yeast. Ensure your yeast is fresh and that your milk is lukewarm, not hot, when added. If needed, place the dough in a warmer area or near a heat source to encourage rising.

Can I freeze bobalky?

Absolutely! Once baked and cooled, you can freeze bobalky in an airtight container. They will keep well for up to 3 months. To enjoy, simply thaw them at room temperature and reheat in the oven for a fresh taste.
