Bob'S Collard Greens

Ingredients

  • 1 bunch collard greens (big bunch)
  • 3 tablespoons butter
  • 2 garlic cloves, minced
  • 1 teaspoon italian seasoning
  • 1 tablespoon sugar
  • 1/4 teaspoon vinegar
  • 1/2 teaspoon red pepper flakes
  • 1 (14 ounce) can stewed tomatoes
  • 1/4 teaspoon fresh ground pepper

Instructions

  1. Chop the collard greens, stems and all, into bite sized pieces.
  2. Bring a big pot of salted water to a boil. Pour in the collards and boil for 18 to 20 minutes.
  3. Meanwhile prepare the sauce.
  4. Melt butter in a saucepan over medium heat.
  5. Add the garlic and saute for 2 minutes.
  6. Add the rest of the ingredients and bring to a simmer.
  7. Once the greens are done drain them and return them to the pot.
  8. Pour the sauce over them and keep warm until you're ready to serve.
