- Remove skin from chicken breast; debone if desired.
- Place chicken in a small stock pot; add some celery, onion and carrot and a piece of fresh ginger.
- Add enough cold water to cover by 2 inches; bring to a boil.
- Cook for 10 to 20 minutes or until chicken is tender and no sign of pink remains.
- Do not overcook.
