Ingredients

  • 1 ham hock
  • 2 qt. water
  • 3 bunches collards, picked and washed
  • 1 tsp. salt
  • 1 tsp. sugar
  • 1/3 c. bacon drippings
  • dash of red pepper
  • 1 clove garlic, minced

Instructions

  1. Boil the ham hock in a 4-quart pot about 30 minutes.
  2. Add the washed collard greens, salt, sugar, bacon drippings, and a dash of red pepper.
  3. Cook for 45 minutes or until greens are tender.
  4. Remove from the pot and cut into bite-sized pieces. Serve with the flavorful liquid, hot cornbread, and onions.
