  • 8 qt. water
  • 2 Tbsp. salt

Instructions

  1. Bring water to a boil in an 8-quart kettle filled two-thirds full.
  2. When water is boiling, rapidly plunge lobsters in, head first, one at a time.
  3. Return to a boil after adding the lobsters.
  4. Cover the kettle, reduce heat to simmer, and cook for 8 minutes for smaller lobsters (1 to 1 1/4 pounds) or 10 minutes for larger lobsters (1 1/2 to 2 pounds).
