Ingredients

  • 2 medium eggplant
  • 2 ripe plantains
  • salt

Instructions

  1. Peel and boil the eggplant until soft.
  2. Boil the plantains until soft.
  3. Mash the cooked eggplant and plantains together.
  4. Prepare a sauce using tomato, onion, garlic, and salt to taste.
  5. Add half of the sauce to the mashed vegetables and mix well.
  6. Spread the remaining sauce on top of the Boronia when serving.
  7. Serve with white rice and broiled steak.
