Bow Ties And Scallops

Ingredients

  • 2 cups cooked bow tie pasta
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • 3 plum tomatoes, diced
  • 3/4 cup vegetable broth (use chicken broth if you like)
  • 6 ounces sea scallops, rinsed and cut in quarters
  • 1 tablespoon minced fresh parsley
  • 2 tablespoons parmesan cheese

Instructions

  1. Have the pasta cooked and drained.
  2. Heat oil in skillet, add garlic and tomatoes, saute for 3 minutes.
  3. Add broth, boil 1 minute.
  4. Add scallops, boil 1 minute.
  5. Add parsley and parmesan, heat through.
  6. Stir in bow ties.
